I used to make some #&%!$in' parmesan chicken. Real easy. I see you're using chicken thighs, very economical and tasty, but a little fattier than breasts. However, an excellent choice nonetheless. I've only done this recipe with breasts, so there might be a little variation, but it will still be good. This recipe calls for basically, breadcrumbs and parmesan cheese, and that's pretty much it. Very easy. Mix about 2 cups of breadcrumbs with about a half cup of parmesan cheese, salt and pepper to taste. Add a little garlic powder if you want to get fancy. Spread liberally over some chicken in a baking pan and bake for 20minutes in an oven at 350F, I think. The juices should be running clear, and the meat should be good and firm.
